INGREDIENTS

2 tablespoons chopped fresh parsley

1 tablespoon chopped fresh mint

1 tablespoon chopped fresh chives

1 teaspoon of oregano

1 teaspoon of thyme

1 teaspoon mixed dried herbs (or regular dried herbs)

1/2 teaspoon chopped rosemary

50ml lemon juice

2 tablespoons of olive oil

1 small onion, peeled and finely chopped

1 tablespoon (flat) salt

Black pepper to taste

1kg chicken thighs (bone-in and skinless)

PREPARATION

1) In a container, place all the items (except the chicken) and mix well;

2) Apply the seasoning to the chicken pieces and leave to marinate for 2 hours in the refrigerator;

3) Transfer the meat to a baking tray and place in a preheated oven at 180 ÂșC for about 1 hour or until the chicken is golden and cooked;

4) Now just serve.
